Cheeky chicken casserole

Serves four

8 Chicken thighs
One large onion – chopped
3 large carrots – chopped
1 tin of cream of chicken soup
Olive oil

Making a tasty, winter warmer doesn’t mean you have to slave for hours over a hot stove. This recipe can easily be adapted to be cooked for 8 hours in a slow cooker. Simply use a large frying pan to brown the thighs and soften the onions. Then transfer to a slow cooker and add the carrots, seasoning and soup.

1 In a large casserole dish heat about 2 teaspoons of olive oil, once it is hot add the chicken thighs. Pre-heat your oven to gas mark 4, (180 degrees C). After seven minutes add the chopped onion and turn the thighs so they can brown on the other side.

2 Once the onion has softened, add the carrots and season with salt and pepper. Next, add the cream of chicken soup, ensuring it goes down to the bottom of the dish. Place the dish in the oven and leave to cook for about two hours. Check it after about 90 minutes, ensuring there is enough moisture. If it needs a little more, just add some milk or cream. Don’t add water as it will curdle the appearance of the dish.

Serve with mashed potatoes, new potatoes or chunks of fresh crusty bread.
