Pork Burgers


  • 1kg pork mince
  • 1 medium onion, finely chopped
  • 1 courgette, grated
  • 1 carrot, grated
  • 1 dessert spoon of horseradish
  • Salt and pepper


Mix all the ingredients in a bowl. Get your hands in there and make sure it’s well mixed up. If you have a burger press, use this to portion out the mixture, if not, just use your hands.

This is enough to make eight burgers. Simple, and ready to go on the BBQ

Potato Salad

InIngredients: Serves 8

  • 1kg decent potatoes
  • ½ jar of gherkins
  • 1 bunch of spring onions
  • 1 punnet cherry tomatoes
  • ½ jar of mayonnaise
  • 2 Little Gem lettuces
  • 6 eggs – hard boiled
  • Salt and pepper


Peel and cut the potatoes roughly into halves (this makes it easier for chopping later) and add to salted, boiling water. Allow to boil until they are soft, then cover in cold water to cool and leave until needed.

Hard boil the eggs, peel and allow to cool.

Add chopped gherkins, chopped spring onion, chopped tomatoes to a large bowl.

Drain the potatoes and chop into bite-size chunks, add to the bowl of ingredients.

Roughly chop the eggs and add to the bowl.

Add the mayonnaise, salt and pepper and mix the ingredients together.

Line an platter with the lettuce leaves around the edges and spoon the potato salad into the middle in a mound.

This recipe is a quick and easy potato salad suitable for BBQs or picnics, (leave out the lettuce if you need to add to a storage container).
