This simple to make fish pie recipe is perfect to make in advance and just heat through in the oven when needed.
Ingredients – Serves 4
1kg Maris Piper potatoes, peeled and halved
Chunk of butter
A tablespoon of flour
Three quarter of a pint of milk
A selection of fish, for this recipe we have used Cod, Salmon and Prawns
A cup full of frozen peas
Some grated cheddar
Salt and pepper to taste
Put a pan of water on to boil and lightly salt it. Add the peeled potatoes and simmer until they are tender. When they are cooked, drain them and, if you have a ricer, put them through that or, if not, just mash them and add a little milk and some butter. Preheat the oven to gas mark 6 (180-200C)
Take a smaller pan and melt some butter. Add the flour and stir it into the butter. Don’t leave it too long before you gently start adding the rest of the milk, stirring often. Bring this mixture to the boil, making sure that there are no lumps. It will gradually start to thicken. Add seasoning to taste.
Remove from the heat, add the fish pieces and cheese (optional), and mix well. Pour mixture into an oven-proof dish, spoon over the mashed potato. Fluff up the top of the potato with a fork. Place the dish in the oven for 20-25 minutes. The top should start to go a little golden brown in colour. Serve with a selection of green vegetables. Alternatively, cover and freeze for use another time.
